Wet Ingredients:
- 1 cup Butter (softened)
- 1 cup Brown sugar
- 1/2 cup White sugar
- 2 eggs
- 3 tsp yogurt (any flavor)
Dry Ingredients:
- 2 cups all purpose flour
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 1/ tsp Kosher Salt
- 3 tsp Cinnamon Powder
- 3 Cups oatmeal (not instant)
- 11/2 cups Raisin (soak in hot water, drain then pour some Rhum until well absorbed)
- Pre-heat oven 400F.
- Mix Dry ingredients then set aside.
- Cream the butter, yogurt & 2 kind of sugar until well blend. Put the eggs in, stir until well combined.
- Add the mixed dry ingredients into the wet ingredients. Do not over stirred.
- Lay baking paper in the baking sheet. Use ice cream scoop to arrange the dough into the baking sheet. Give enough space to each scoops.
- Bake about 11-13 minutes for each batch.
- Transfer into other baking sheet for cooling, the dough will slightly lumpy while you transfer them, but it will firm shortly after.
